Half the group woke up bright and early for breakfast at 6 am. Us East Ridge students and Chaska/Chanhassan students left for horse back riding after a delicious breakfast of eggs, beans and rice with fresh fruit. We were all very tired and were really jealous of the others because they got to sleep in. Arriving at the farm we could see all the beautiful horses lined up and ready. We trotted through a breathtaking path where we could see for miles up on the volcano. We loved being with all the horses, and it was hilarious when they pooped and peed or kicked. We got a long and much needed rest from 9 am to lunch, while the Wayzata students went horseback riding as well. The rest was really great for us to recharge our minds before meeting to do more science. We enjoyed nice snacks from the Pulparia grocery store and watching Stranger Things and The Office on Netflix. Lunch was filling with delicious breaded fish and rice. We all met back up at 2 for more science! We have chosen our final projects and are all embarking on different paths to start. Some of us were a little frustrated with our groups and projects, but most are going to bed feeling accomplished. East Ridge and Chaska/Chanhassan got to be the first to go to the cooking class. We went to a cute little house that felt like we were visiting a relative. The head cook Aracelly, was so nice and warm and she felt like an Aunt. We had a blast cooking and laughing in the kitchen. Getting to know all the people from other schools was super fun. The chicken, rice, plantain chips and tortillas (made by each of us), were delicious. After eating we listened to Spanish music and danced with the cooks and our super nice and funny driver, Eddie. The whole experience was amazing and made this the best day yet!

Horseback riding up the Santa Maria volcano. The view was amazing. Photos do not do it justice.

Came back to do some science.

Made it to Aracelly's cute rainforest cottage for dinner.

Mark doing a fine job making a rose shaped tomato for our salad.

Carolyn and Allison making handmade tortillas.

The beautiful salad made from the chefs from East Ridge.

(Below) After dinner we danced, laughed, made new friends and had a hard time saying goodbye!
